Vegan Ranch dressing
1/2 cup raw cashews, soaked at least 30 mins in hot water
Pinch dried mustard powder
1 1/2 tsp apple cider vinegar
1/4 tsp dried garlic
1/4 tsp onion powder
1/4 cup water
1 tbsp minced fresh chives
Salt + pepper to taste
Drain and rinse the cashews then add them to a blender along with the remaining ingredients. Blend on high until smooth and creamy, adding additional water if needed. Place in a jar, and chill for at least 1 hour before using. It will thicken as it chills. Use within 1 week.
