Macaroni cheese

Serves 3-4 adults or 4-6 kids

2 litres water
1 tsp salt
2 c macaroni
3 tbsp butter
3 tbsp flour
2 c milk
1/2 tsp salt
1/2 tsp dry mustard
pinch cayenne pepper
2 c grated cheese (any, or a mix)
breadcrumbs
1 sml onion (optional)

Macaroni
Bring salt and water to boil, drop in macaroni. Boil till tender, drain, and pour cold water through to prevent stickiness.

While this is cooking make the sauce.

Sauce
Melt butter, add onion, saute. Add flour then milk, salt, mustard and cayenne.
Bring to boil while stirring over low heat. Add cheese, remove from heat.

Add macaroni.
Put in a buttered baking dish, sprinkled with buttered crumbs.. Place under grill to brown.
