Honey Toasted Muesli
4 cups quick-cook rolled oats
1/2 cup fine desiccated coconut
1/2 cup roughly ground nuts: flaked almonds, hazelnuts, walnuts
1 tsp ground cinnamon
generous pinch of sea salt
1/3 cup virgin coconut oil or 75g butter or ghee
4 Tbsp honey or 1/4 cup maple syrup
1 cup finely chopped dried fruit: apricots, dates, figs, raisins, sultanas, currants
Directions
Preheat the oven to 150°C.
Combine the oats, nuts, cinnamon and salt in a large bowl. In a saucepan, gently heat the honey with the oil/butter/ghee until combined. Pour over the mix, and combine. Spread out evenly in a large baking tray. Cook in the oven, stirring every 15 minutes or so until evenly browned or toasted as much as you want it to be. Leave to cool then add dried fruit. Store in a large airtight jar/ container in the pantry.
Serve muesli with yogurt and fresh fruit: sliced banana, grated apple, pear, berries.
*Or serve as Bircher Muesli by soaking toasted muesli overnight in milk or hot water so to soften the oats and make them easier to digest.
VARIATION: For gluten-free muesli, omit the rolled oats and toast the coconut, nuts and seeds as above. Once cool fold through with 2 cups puffed rice or puffed millet, and 2 cups corn flakes.
